Coconut flour is a low-carb eater's best friend. Made from the pulp of the coconut with its oils and liquids removed, coconut flour is a high-fibre, gluten-free, low-carb flour substitute that can be used to make everything from pancakes to muffins and pizza. It's highly absorbent, so generally can't be substituted 1:1 for wheat flour in recipes.
