Wheatgrass is the freshly-sprouted first leaves of the wheat plant. It contains chlorophyll, amino acids, minerals, vitamins and enzymes. Wheatgrass is a source of potassium, dietary fibre, vitamin A, vitamin C, vitamin E, vitamin K, thiamin, riboflavin, iron, zinc, copper and selenium, as well as protein.
Barley, a member of the grass family, was one of the first cultivated grains, particularly Eurasia as early as 10 000 years ago. It's high in fibre, potassium, folate and vitamin B6.
